Recipe: Raw Cheesecake With Fruit Sauce
Who says delicious desserts can’t be healthy?
A delicious alternative to cheesecake. Combining honey, coconut oil, vanilla and other ingredients to form an amazing center, topped with fresh fruit!
- 2 cups raw macadamia nuts
- 1/2 cup dates, pitted
- 1/4 cup dried coconut
For the cheese:
- 3 cups chopped cashews, soaked for at least 1 hour
- 3/4 cup lemon juice (or lime juice)
- 3/4 cup honey
- 3/4 cup coconut oil
- 1 teaspoon vanilla
- 1/2 teaspoon celtic sea salt (optional)
For the raspberry sauce:
- 1 bag frozen raspberries (or blueberries or blackberries, or any berries!)
- 1/2 cup dates
Directions:
-To make the crust, process the macadamia nuts and dates in the food processor or Vitamix. Sprinkle dried coconut onto the bottom of an 8 or 9 inch springform pan. Press crust onto the coconut. This will prevent it from sticking.
-To make the cheese, blend the cashews, lemon, honey, gently warmed coconut oil (do not use microwave), vanilla, sea salt (if using), and 1/2 cup water. Blend until smooth and adjust to taste.
-Pour the mixture onto the crust. Remove air bubbles by tapping the pan on a table.
-Place in the freezer until firm. Remove the whole cake from the pan while frozen and place on a serving platter. Defrost in the refrigerator. (I didn’t defrost it all the way)
-To make the raspberry sauce, process raspberries and dates in a food processor or blender until well blended. Or use any other type of berry you desire!
Thanks to Kyle Eilerman for sharing how his recipe turned out!
He shares tips for flavors and cost savings:
Fruit sauce is strawberries and honey (recipe actually calls for berries and dates). So amazingly delicious!
The dates aren’t as necessary. They’re to help with flavor/hold together the crust. I would lessen the lemon a bit though… It’s still so good, but a bit more lemony than like the “cheesecake flavor” you might be hoping for. Still awesome regardless!
Because macadamia nuts are very expensive. And too darn tasty to use on just a crust. Cashews are super cheap (if you are going to buy nuts). Add half the lemon called for.
