Frosty Peppermint Chocolate Smoothie

A thick and creamy double decker peppermint and chocolate smoothie creation by Raw Food Chef, Rebecca Almazan is out of this world. Dates, frozen bananas and you also get the benefit of additional fiber from psyllium husk which helps give the chocolate layer an amazing pudding-like texture without having to rely on nuts or additional fats.

INGREDIENTS
Bottom Chocolate Layer:
2 frozen bananas
2 tablespoons raw cacao
1 cup coconut milk
2 tablespoons ground psyllium husk
2 dates
Top Minty Layer:
2 frozen bananas
1 cup coconut milk
1/2 teaspoon peppermint oil (adjust to taste)
1/2 teaspoon spirulina (optional for green color)
METHOD
1) Blend the bottom layer first and allow to sit in the cup while you blend the top layer. This will allow the psyllium time to solidify and make a “pudding” like consistency.
2) Then blend the top layer and pour on top.
3) You can garnish your smoothie with coconut shreds, goji berries and cacao nibs. Enjoy!
