Recipe – Freckled Blonde Truffles

We all love to indulge in sweet treats, but most traditional desserts are laden with high fat calories, processed sugars and refined chemicals. Guilt (and weight-gain) usually follows.

Instead, these delicious Freckled Blonde Truffles are free from refined sugars, gluten, bad fats, and anything artificial! In fact, these treats are so nutrient-dense, you can in*joy them for breakfast and feel satisfied until lunch.

Chia seeds absorb water helping you to feel fuller quicker and for longer.
This is key for weight-loss as hunger pains are usually the trigger behind binges. They also help to balance blood sugar reducing the possibility of blood sugar spikes and drops, which once again lead to snacking on (usually non-healthy) foods. Chia is one of nature’s highest plant-based sources of complete protein.

Most ‘protein’ items are incomplete proteins meaning you need to combine them with other foods to get the benefit. Chia, on the other hand, is a complete protein, enough to raise your energy levels on its own. The combination of complete protein, vitamins, minerals, and blood-sugar balancing gel all work together to give you steady energy throughout your day! And did you know you can also use chia seeds to replace butter in most recipes?

All you need to do is divide the butter in half and replace with the same amount of chia gel (chia soaked in water). Another way to help you lose weight! So get rolling today and enjoy for breakfast, an afternoon snack or as a sweet way to end your day!
Ingredients:

  • 1/4 cup honey
  • 1/4 cup organic unrefined coconut oil
  • 1/2 cup finely shredded organic raw dried coconut (Even better if you can dehydrate your own fresh coconut)
  • 1/2 cup raw organic cashews
  • 1/4 tsp ground vanilla or alcohol free liquid vanilla
  • 3 – 4 tablespoons chia seeds
  • Pinch of Himalayan salt

Place coconut and cashews in vita-mix and blend until you reach flour-like consistency (about 10 seconds). (You can also use your food processor for this too.)

Remove from vita-mix and place in bowl. Melt coconut oil over a double boiler until liquid. Add honey, coconut oil, vanilla, chia seeds and sea salt to bowl and mix until well combined, scraping sides a couple times. Chill in refrigerator for 45 mins. Once mixture is chilled, scoop by teaspoon-fulls and roll into balls and chill again for at least 10 minutes. Keep refrigerated until ready to eat. You can also freeze extra truffles.

Makes about 30 truffles (1 teaspoon of mixture in size).
